Oatmeal-Raisin Cookies…for Breakfast

Oatmeal-Raisin cookies that you can have for breakfast! Say no more! Who doesn’t want to eat their cookies first! Sure you can have these for snack or dessert but sweets for breakfast are just so, well SWEET!

Oatmeal-Raisin Breakfast Cookies 

Ingredients

  • 1/2 cup rolled oats (love Quaker Oats!)
  • 1 over-ripe banana (mashed)
  • 1/4 cup creamy peanut butter (your favorite)
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 3 tablespoons raisins (golden raisins work great as well)
  • 1/4 cup sugar

What! No eggs, no flour! That’s right. Simple wholesome ingredients perfect for breakfast and feeling good! :)

  1. Preheat the oven to 350ºF.
  2. Prepare a cookie sheet with a sheet of wax paper. Set aside.
  3. Mash the banana with the peanut butter.
  4. Combine all other ingredients and mix until well-combined. OR you can try pulverizing the raisins and oats before combining them with the banana mixture.
  5. Shape into cookies and bake for 20-25 minutes or until golden brown.
  6. Cool on a wire rack completely

    Hey…just a note. I love your recipes! I’ve had fun making them and am excited to keep trying more. However, do you know that those who are gluten intolerant are not supposed to eat Quaker Oats? In fact, some even debate whether we should be able to eat the ones like Bob’s Red Mill Gluten Free Oats. Just a note…overall I love your recipes. I’m just concerned that most people wouldn’t know they shouldn’t eat the Quaker Oats, especially if they have celiacs.

    Please keep the recipes coming though!!!! Love it!!!

      Hi. Thanks so much. I have heard that those who are gluten intolerant are not supposed to eat Quaker Oats. I can tolerate Quaker Oats which is very interesting. I don’t eat or use oats often. As always you should always eat and use what you can tolerate. Read ingredients and use only what you can eat. I should have said that in the recipe. Thank you!
