Super Bowl XLVI Champion Cupcakes

The New York Giants won the Super Bowl XLVI with a score of 21–17.

Even though I am a Jet fan, I am celebrating tonight as a New Yorker. Plus cupcakes and football = fun so we all win! :)

To celebrate the Giants Super Bowl victory, Blue Velvet Giants Superbowl Cupcakes!

Super Bowl XLVI New York Giant Champion Cupcakes

Ingredients

For the Cupcakes

  • 1 box gluten free white or yellow cake mix
  • 2 tablespoons cocoa powder
  • 1 1/4 cups coconut milk
  • 1/3 cups canola oil
  • 3 eggs
  • 3 bottles blue food coloring
  • 1 toothpick full violet food coloring gel/paste

For the Frosting

  • 1/2 cups vegan butter, at room temperature
  • 2 cups confectioners sugar
  • 1 teaspoon pure vanilla extract
  • 2-3 tablespoons coconut milk
  • red nonpareils
  1. Preheat oven to 325ºF. Mix cake mix, cocoa powder, eggs, oil and buttermilk together, starting with 30 seconds on low speed, then increasing to medium speed for 1 minute.
  2. Add in food coloring and beat for 1 minute more until totally blue and combined.
  3. Pour into 2 muffin tins lined with baking cups. Fill about 2/3 full.
  4. Bake for 16 – 18 minutes or until a toothpick comes out clean. Let cool.
  5. To make the frosting, beat the vegan butter.
  6. Add in sugar, 1 cup at a time, thinning out with milk as necessary. Beat in vanilla.
  7. Pipe onto cooled cupcakes
  8. Serve and enjoy!

Puppy Chow

You gotta have a snack for Puppy Bowl VIII! How about some Puppy Chow?

Puppy Chow aka Chex Muddy Buddies combines crunchy Chex with chocolate and peanut butter! It’s pretty doggone good! :)

Puppy Chow

Ingredients

  • 9 cups Rice Chex, Corn Chex, Chocolate Chex and Honey Nut Chex cereal (you want a combination of all of them 2 1/4 cups of each) 
  • 1 cup semisweet chocolate chips (gluten free)
  • 1/2 cup creamy peanut butter
  • 1/4 cup vegan butter (Earth Balance)
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups powdered sugar
  1. Into large bowl, measure cereal; set aside.
  2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and vegan butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla.
  3. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
  4. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool.
  5. Pour into favorite snack bowl and chow down.
  6. Store any leftovers in an airtight container in refrigerator. (I doubt there will be any leftovers!)

 

Are You Ready For Some FOOTBALL!? – Super Bowl XLVI

IT’S SUPER BOWL SUNDAY! I’ve got just a few more recipes for you before Puppy Bowl VIII! (who can resist puppies!!)

At your Super Bowl Party, you may have some guests who aren’t fans of buffalo wings (why? who knows but they are out there). Why not tantalize their tastebuds with some Sweet and Spicy Baked Chicken Wings!

Sweet and Spicy Baked Chicken Wings

Ingredients

  • 3 pounds chicken wings and drums
  • 1 teaspoon freshly ground pepper 
  • 1 cup honey, divided
  • 1/2 cup vegan butter, melted (Earth Balance)
  • 1/2 cup Frank’s Red Hot
  • 2 teaspoons Sriracha (this stuff is HOT and I love it!)
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  1. Preheat oven to 350ºF. Line a large broiler pan with foil and place a metal rack on top of the foil. Spray foil with nonstick cooking spray.
  2. Rinse the wings in cold water and pat dry with paper towels.
  3. Arrange wings on pan and season with pepper.
  4. Place wings in oven and set timer for 15 minutes. When the timer goes off, remove the wings from the oven and brush the wings with ½ cup honey. Be sure to glaze both side of the wings, using metal tongs to turn.
  5. Place wings back into the oven, set the timer for 30 minutes, and prepare the sauce.
  6. In a medium bowl, combine melted vegan butter, remaining 1/2 cup of honey, Frank’s Red Hot, Sriracha, cayenne, and garlic powder; whisk to combine.
  7. While the wings are baking, periodically baste both sides of the wings with the sauce (about every ten minutes). Once the timer goes off, turn up the heat up to 400º F and bake for an additional 15 minutes.
  8. Serve with your favorite Super Bowl sides like some baked french fries!

HMMM…FRIES! You gotta have fries with wings! (Or at least I do!)

Garlicky Baked French Fries

Ingredients

  • 8 garlic cloves, minced
  • 6 tablespoons extra virgin olive oil
  • 3 russet potatoes (about 8oz each), each cut into 12 wedges
  • 3 tablespoons cornstarch/cornflour
  • 1 1/2 teaspoons coarse sea salt
  • 1 1/2 teaspoons freshly ground black pepper
  • ½ teaspoons garlic powder
  • 1/4 teaspoons cayenne pepper
  1. Preheat oven to 440° F. Line a baking sheet with foil and set aside.
  2. Combine the garlic and oil in a large bowl (that has a lid) , warming it until the garlic is fragrant, about 1 minute.
  3. Transfer 5 tablespoons of the oil (leaving the garlic in the bowl) to the baking dish, coating it well.
  4. Add the potatoes to the bowl with the garlic mixture and toss to coat. Close the bowl tightly with the lid and microwave on high until the potatoes are translucent around the edges, 3 to 6 minutes, shaking the bowl to redistribute the potatoes halfway through cooking.
  5. Combine the cornstarch, salt, pepper, garlic powder, and cayenne in a small bowl. Sprinkle over the hot potatoes and toss well to coat.
  6. Arrange the potatoes in a single layer on the baking sheet and bake, turning once, until deep golden brown and crisp, 30 to 40 minutes.
  7. Garnish with some fresh parsley.
  8. Serve with ketchup, or mayo or your favorite dipping sauce.

The countdown to game time has started. Puppy Bowl starts at 3:00pm ET and the main event SUPER BOWL XLVI begins at 6:30pm ET.
