<p><strong>Crawfish Beignets with Spicy Remoulade</strong></p>
<p><em>This is definitely a recipe that will wow whoever is sitting at your table! Yes, it&#8217;s a LOT of ingredients, but A LOT of great flavor! Don&#8217;t be intimidated, it will be delicious! <em>For vegetarian Cajun beignets, simply eliminate the crawfish and increase the amount of red peppers and scallions by approximately 1 cup (this measurement includes both vegetables). </em></em></p>
<p><em></em><a href="http://21nogluten.files.wordpress.com/2012/02/crawfishbeignets.jpg"><img class="alignleft size-medium wp-image-1100" title="Crawfish Beignets" src="http://21nogluten.files.wordpress.com/2012/02/crawfishbeignets.jpg?w=300&#038;h=199" alt="" width="300" height="199" /></a>Ingredients</p>
<p><em>For the Beignets:</em></p>
<ul>
<li>10 ounces crawfish, coarsely chopped</li>
<li>1 cup unbleached all-purpose gluten free flour</li>
<li>1 teaspoon baking powder</li>
<li>2 tablespoons paprika</li>
<li>1 teaspoon dried oregano</li>
<li>1/4 teaspoon cayenne pepper (1/2 teaspoon if you want more heat!)</li>
<li>1 cup water</li>
<li>1 teaspoon salt</li>
<li>1 teaspoon garlic, finely diced</li>
<li>3 scallions, finely diced</li>
<li>1 red pepper, finely diced</li>
<li>2 tablespoons olive oil</li>
<li>4 dashes Tobasco</li>
<li>Vegetable, Canola or Peanut Oil for frying</li>
<li>Lemon wedges for serving</li>
</ul>
<p><em>For the Rémoulade:</em></p>
<ul>
<li>1 cup mayonnaise</li>
<li>2 tablespoons cornichons, finely diced</li>
<li>2 tablespoons finely chopped flat-leaf parsley</li>
<li>2 tablespoons capers, finely diced</li>
<li>1 tablespoon finely chopped fresh tarragon</li>
<li>1 tablespoon minced shallots</li>
<li>2 teaspoons sherry vinegar</li>
<li>1 teaspoon paprika</li>
<li>2 dashes Tabasco</li>
<li>Juice of half a lemon</li>
<li>Salt and pepper</li>
</ul>

<li>First, make the rémoulade. In a medium bowl, combine the mayonnaise, cornichons, parsley, capers, tarragon, shallots, vinegar, paprika, Tabasco, lemon juice and lemon zest.</li>
<li>Stir to combine; season with salt and pepper.</li>
<li>Cover and set aside.</li>
<li>Next, make the beignets. Heat two tablespoons of olive oil in a skillet over medium heat.</li>
<li>Add the diced red pepper and cook until soft, approximately 8-10 minutes.</li>
<li>Add the garlic and cook for an additional two minutes.</li>
<li>In a large bowl, whisk the gluten free flour, salt, baking powder, paprika, oregano and cayenne pepper.</li>
<li>Add the water, scallions, crawfish, red pepper and garlic, stirring well to combine.</li>
<li>Cover with a damp towel and set aside for 15 minutes.</li>
<li>In an electric skillet or a heavy pot, heat 2-3 inches of oil until it reaches 350ºF. Drop the crawfish batter by small spoonfuls into the oil and fry until golden brown, approximately 5 minutes. With a slotted spoon, transfer beignets to a paper towel-lined plate.</li>
<li>Serve the beignets warm with lemon wedges and rémoulade for dipping.</li>
</ol>
<p>Spicy crawfish. Now that is southern, down home goodness!</p>

<p>That was before I was gluten free. Thanks to Food Network (thanks Pat and Gina Neely!), I have found a great recipe that I can tweak a little bit and all while remaining DELICIOUS!</p>
<p><strong>Hushpuppies</strong></p>
<p><em>A hushpuppy or cornbread ball is a savory, starch-based food made from cornmeal batter that is deep fried or baked in small ball or sphere shapes. Hushpuppies are a food with strong ties to the South, although they are available in many areas of America on the menus of deep fried fish restaurants. <a href="http://21nogluten.files.wordpress.com/2012/02/hush-puppies.jpg"><img class="alignright size-medium wp-image-1093" title="Hushpuppies" src="http://21nogluten.files.wordpress.com/2012/02/hush-puppies.jpg?w=300&#038;h=234" alt="" width="300" height="234" /></a></em></p>
<p>Ingredients</p>
<ul>
<li>Peanut oil, for frying</li>
<li>1 cup yellow cornmeal</li>
<li>3/4 cup gluten free flour</li>
<li>1 teaspoon kosher salt, plus more to taste</li>
<li>1/2 teaspoon sugar</li>
<li>1/2 teaspoon cayenne pepper</li>
<li>1/2 teaspoon smoked paprika</li>
<li>1/2 small Vidalia onion, finely grated</li>
<li>4 scallions, thinly sliced</li>
<li>1 cup coconut milk</li>
<li>1 large egg, beaten</li>
</ul>
<ol>
<li>Preheat 2 inches peanut oil in a deep-fryer or Dutch oven to 375ºF.</li>
<li>Whisk the cornmeal, flour, 1 teaspoon salt, the sugar, cayenne and paprika in a large bowl to get rid of the lumps. (No one likes a lumpy hushpuppy.)</li>
<li>Mix in the remaining ingredients, stirring well to combine.</li>
<li>Dip 2 spoons into a mug of water (this allows the batter to come clean off).</li>
<li>Scoop up about 1 1/2 tablespoons of the batter and carefully slide it into the hot oil, working in batches.</li>
<li>Fry the scoops of batter 3 to 5 minutes, or until golden brown and cooked all the way through (test the first one for doneness).</li>
<li>Remove and drain on a paper towel-lined baking sheet, seasoning with salt as soon as they come out of the fryer.</li>
</ol>

			<content:encoded><![CDATA[<p>Since yesterday&#8217;s Fat Tuesday, I have been thinking about spicy and seafood and good old fashioned, down home cooking. Southern cooking is delicious and a lot of the deliciousness is fried! Not always the healthiest for you, but everything in moderation. Enjoying a fried shrimp appetizer or meal can be a fun treat for you and however you are cooking for!</p>
<p><strong>Almost-Famous Spicy Fried Shrimp</strong></p>
<p><em><a href="http://21nogluten.files.wordpress.com/2012/02/spicyfriedshrimp.jpg"><img class="alignleft size-medium wp-image-1089" title="Spicy Fried Shrimp" src="http://21nogluten.files.wordpress.com/2012/02/spicyfriedshrimp.jpg?w=300&#038;h=225" alt="" width="300" height="225" /></a>For the Sauce:</em></p>
<ul>
<li>1/2 cup mayonnaise</li>
<li>1 tablespoon plus 1 teaspoon Asian chili sauce (such as sambal oelek)</li>
<li>2 teaspoons honey</li>
<li>Kosher salt</li>
</ul>
<p><em>For the Shrimp:</em></p>
<ul>
<li>Vegetable oil, for frying</li>
<li>2 large eggs</li>
<li>3/4 cup all-purpose gluten free flour</li>
<li>1/2 cup cornstarch</li>
<li>Kosher salt and freshly ground pepper</li>
<li>1 1/4 pounds small shrimp, peeled and deveined</li>
<li>Bibb lettuce leaves, for serving</li>
<li>Thinly sliced scallions, for garnish</li>
</ul>
<ol>
<li>First, make the dipping sauce. Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.</li>
<li>Now prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350ºF.( If you don&#8217;t have a deep-fry thermometer, test how hot the oil is by wetting your hand a little and spritz a little of the water on the pan. If the water dances, you pan is ready)</li>
<li>Meanwhile, whisk the eggs in a shallow bowl. Whisk the flour, cornstarch and 1 teaspoon each salt and pepper in another shallow bowl.</li>
<li>Working in batches, dredge the shrimp in the flour mixture, shaking off any excess, dip in the beaten eggs, then return to the flour mixture, turning to form a thick crust. Fry the shrimp in the hot oil until lightly golden, 1 to 2 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer to a paper-towel-lined plate with a slotted spoon.</li>
<li>Toss the shrimp with the prepared sauce. Arrange the lettuce in a shallow serving bowl or on individual plates. Top with the shrimp and garnish with scallions.</li>
</ol>
<p>Enjoy with your favorite sides! Meals out of an appetizer or enjoy lots of small plates. Small plate dining is becoming very popular!</p>

<li>1/2 cup superfine sugar</li>
<li>1/3 cup gold tequila</li>
<li>1/3 cup triple sec</li>
<li>2 large kiwis, peeled</li>
<li>1 cup fresh lime juice</li>
<li>2 cups small ice cubes</li>
<li>Lime wedge for rim</li>
<li>Sugar for rim</li>
<li>Kiwis sliced for garnish</li>

<li>Combine the sugar, tequila, triple sec, kiwis, and lime juice in a blender.</li>
<li>Fill with ice cubes and blend until smooth.</li>
<li>Wet the rims of your margarita glasses with lime wedge and then dip rims in sugar.</li>
<li>Pour blended margarita into glasses and garnish with kiwi slices.</li>

<li>Combine the ingredients without ice and shake vigorously.</li>
<li>Wet the rim with a lime wedge and dip rim of glass into sugar.</li>
<li>Then just pour the mixture over ice in rimmed glass.</li>
<li>Garnish with a lime wedge.</li>

<p>The piña colada is a popular cocktail. Let&#8217;s turn those flavors on their head an make a coconut margarita.</p>
<p><strong>Coconut Margarita</strong></p>

<ul>
<li>1 cup sweetened shredded coconut</li>
<li>1/2 teaspoon salt</li>
<li>1/2 cup freshly squeezed lime juice, plus 2 tablespoons for glasses (about 5 limes)</li>
<li>3/4 cup Coco Lopez or cream of coconut</li>
<li>1/2 cup plus 2 tablespoons tequila</li>
<li>1/4 cup Cointreau or other orange liqueur</li>
</ul>
<ol>
<li>Preheat oven to 350 degrees. On a rimmed baking sheet, toss coconut with the salt. Spread on sheet; toast in oven, stirring frequently, until golden brown, 8 to 10 minutes. Let cool, then crush with your hands until crumbly.</li>
<li>Pour 2 tablespoons lime juice into a shallow dish. Place coconut mixture in another dish. Dip rims of two cocktail glasses in lime juice, then in coconut mixture, coating well.</li>
<li>Combine remaining ingredients with 1 cup ice in a blender; puree until smooth. Divide evenly between prepared glasses, and serve immediately.</li>

			<content:encoded><![CDATA[<p>OH MY GOODNESS! How could I do all these Mardi Gras posts with a Mardi Gras King Cake recipe?!</p>
<p><strong>Mardi Gras King Cake</strong></p>
<p><em><a href="http://21nogluten.files.wordpress.com/2012/02/kingcake.jpg"><img class="alignleft size-full wp-image-1074" title="Mardi Gras King Cake" src="http://21nogluten.files.wordpress.com/2012/02/kingcake.jpg?w=535" alt=""   /></a>King Cake&#8211; the preferred dessert/snack of Mardi Gras.  It wouldn&#8217;t be Carnival without one.  From the Twelfth Night (January 6) to Fat Tuesday (date varies) King Cakes are baked and gobbled up all over New Orleans. Although the name implies cake, it is essentially a sweetened, enriched bread dough similar to a brioche.  Think coffee cake (yes, you can eat it for breakfast, too, MMMM). They are glazed with a simple confectioners&#8217; sugar mixture, then colored sugar or crystals in Mardi Gras colors crown the top; purple for justice, green for faith, and gold for power. Nowadays there are other versions filled with cream cheese, praline, and even one with a coconut filling and chocolate icing&#8211;yum!</em></p>
<p>Ingredients</p>
<div><em>makes one 12-inch oval cake</em></div>

<div><em>For the Dough</em></div>
<div>
<ul>
<li>1/2 cup coconut or almond milk</li>
<li>2 Tablespoons (1 ounce) unsalted vegan butter (Earth Balance)</li>
<li>1 package (2 1/4 teaspoons) active dry yeast</li>
<li>1/3 cup warm water</li>
<li>1/4 cup granulated sugar</li>
<li>1 extra large egg</li>
<li>1 extra large egg yolk</li>
<li>1/2 teaspoon pure vanilla extract</li>
<li>1 teaspoon kosher salt</li>
<li>Pinch of nutmeg</li>
<li>3 cups unbleached all-purpose gluten free flour</li>
</ul>

<div><em>For the Filling</em></div>
<div>
<ul>
<li>1/2 cup packed light brown sugar</li>
<li>1 tablespoon ground cinnamon</li>
<li>1/4 cup unbleached all-purpose gluten free flour</li>
<li>4 tablespoons (2 ounces) unsalted vegan butter, melted (Earth Balance)</li>
</ul>
</div>
<div><em>For the Icing and Decoration</em></div>
<div>
<ul>
<li>2 cups confectioners&#8217; sugar</li>
<li>2 tablespoons light corn syrup</li>
<li>2 tablespoons coconut milk</li>
<li>1/4 teaspoon pure vanilla extract</li>
<li>Colored sugar crystals (Mardi Gras colors of course!)</li>
</ul>

<li>For the Dough: In a small saucepan over medium heat, heat the milk until bubbles appear around the edges.  Add the butter and set aside to cool to room temperature.</li>
<li>In the bowl of a stand mixer fitted with the dough hook, dissolve the yeast in the warm water with 1 tablespoon of the sugar.  Let stand until bubbled and frothy, about 10 minutes.  Add the cooled milk mixture, the eggs, remaining sugar, vanilla, salt, and nutmeg.  With the mixer on low, knead in the flour one cup at a time.  Increase the speed to medium-high and knead until smooth, about 5-7 minutes.</li>
<li>Transfer the dough to a lightly floured surface and knead into a ball.  Spray a large bowl with non-stick spray, cover with a sheet of plastic wrap, and place in a warm, draft free place until doubled in volume, about 60-90 minutes.</li>
<li>For the Filling: In a medium bowl, combine the brown sugar, cinnamon and flour.  Pour in the melted butter and mix until a paste forms; set aside. Line<a href="http://21nogluten.files.wordpress.com/2012/02/mardi-gras2.jpg"><img class="alignright size-medium wp-image-1075" title="Mardi Gras Masks" src="http://21nogluten.files.wordpress.com/2012/02/mardi-gras2.jpg?w=300&#038;h=300" alt="" width="300" height="300" /></a> a baking sheet with parchment paper; set aside.</li>
<li>When the dough has risen, transfer it to a lightly floured surface.  Roll the dough into a 10&#215;24-inch rectangle.  Spread the filling (it won&#8217;t be smooth and even) over the dough.  Starting with the widest end, roll up the dough into a jelly roll, pinching the seems well.  Bring the ends together to form an oval, pinching the end seams, as well.  Place the oval onto the prepared baking sheet.  Cover with a damp cloth and allow to rise in a warm draft free place until doubled in size, about 45 minutes.</li>
<li>Meanwhile, preheat the oven to 375° F.  Bake the cake for 30 minutes, tenting with a sheet of foil the last 10 minutes if it appears to be browning too quickly.  Transfer to a wire rack to cool completely.</li>
<li>For the Icing and Decoration: In a medium bowl, whisk together the confectioners&#8217; sugar, milk, corn syrup, and vanilla until smooth.  Place the cake (still on the rack) over a rimmed baking sheet. Pour the icing over the top of the cake, letting it drip down the sides.  Sprinkle with the sugar crystals, alternating colors as you go.  Allow the icing to set before slicing.</li>

<li>Combine regular rum, rum with coconut flavoring, grenadine, orange juice, pineapple juice and crushed ice in an electric blender.</li>
<li>Blend until the drink&#8217;s consistency is slushy.</li>
<li>Pour in glasses and garnish with some pineapple slices.</li>

<p><strong>Bourbon Slush</strong></p>
<p><em><a href="http://21nogluten.files.wordpress.com/2012/02/bourbonslush.png"><img class="alignleft size-medium wp-image-1071" title="Bourbon Slush" src="http://21nogluten.files.wordpress.com/2012/02/bourbonslush.png?w=300&#038;h=225" alt="" width="300" height="225" /></a>A fruity blend of juices, tea and bourbon whiskey are frozen into a slush, and then served topped off with lemon lime soda. This is a two day drink so plan ahead!</em></p>
<p>Ingredients</p>
<ul>
<li>1 (6 ounce) can frozen orange juice concentrate</li>
<li>1 (12 ounce) can frozen lemonade concentrate</li>
<li>1 (46 fluid ounce) can pineapple juice</li>
<li>1 1/2 cups white sugar</li>
<li>2 cups strong brewed black tea</li>
<li>2 cups bourbon whiskey (Bourbon - <em>Makers Mark </em>is a gluten free bourbon)</li>
<li>1 (2 liter) bottle lemon-lime flavored carbonated beverage</li>
</ul>
<ol>
<li>In a large bowl or container, mix together the orange juice concentrate, lemonade concentrate, pineapple juice, sugar, tea, and whiskey. Transfer to shallow bowls or dishes, and freeze overnight.</li>
<li>Remove the frozen mixture from the freezer and let stand for about 10 minutes. Chop with a wire whisk or potato masher to make a slushy consistency. Place scoops of the frozen slush into glasses, and top off with the lemon-lime flavored soda.</li>

<p><strong>Lava Lamps </strong></p>

<p>Ingredients</p>
<ul>
<li>1 (3 ounce) package red or blue colored instant gelatin mix</li>
<li>1 cup boiling water</li>
<li>1 cup vodka

<li>1 (750 milliliter) bottle champagne</li>

<ol>
<li>In a medium bowl, stir together the gelatin mix and boiling water until completely dissolved, about 2 minutes. Stir in vodka. Pour the liquid into small paper cups or portion cups. Chill until set, at least 2 hours.</li>
<li>Pour champagne into glasses. Break up the gelatin with a fork, and pour into a glass of champagne. A little stir gives it some &#8216;lava&#8217; action. Drink with caution, these will sneak up on you.</li>

<p>Ingredients</p>

<li>1/2 cup carbonated water</li>

<li>2 tablespoons dark rum</li>
<li>2 tablespoons 151 proof rum</li>
<li>2 tablespoons orange curacao (orange flavored liqueur)</li>
<li>2 tablespoons almond flavored syrup</li>
<li>2 tablespoons simple syrup</li>
<li>1-1/4 limes, juiced</li>
<li>1 cup fresh orange juice</li>
</ul>
<ol>
<li>In a large jar or drink cooler, combine the light rum, dark rum, 151 rum, orange liqueur, almond syrup, simple syrup, and lime juice.</li>
<li>Stir and top off with orange juice.</li>
<li>Do not use grenadine if you want the true Mai Tai!</li>
<li>Serve in 8 to 12 ounce glasses with ice.</li>

<p>Ingredients</p>

<li>2 cups ice</li>
<li>1 cup light rum (Malibu is my favorite and super versatile)</li>
<li>1 cup passion fruit flavored syrup</li>
<li>4 cups lemon-lime flavored carbonated beverage (Sprite and 7-Up work the best)</li>
<li>1/4 pound lime juice</li>
<li>1/2 cup 151 proof rum</li>
</ul>

<li>Shake well and pour mixture into a Hurricane or other large specialty glass.</li>
<li>Float the 151 proof rum on top of the drink.</li>

<p><strong>Storm of the Century Hurricane</strong></p>
<p><em>A Hurricane with a twist. &#8211; This twist DOES have vodka. <p>Ingredients</p>
<ul>
<li>2 cups ice cubes</li>
<li>1/4 cup light rum</li>
<li>1/4 cup dark rum</li>
<li>1/4 cup coconut rum</li>
<li>1/4 cup vodka

<li>1/4 cup Chambord (raspberry liqueur)</li>

<li>Fill a hurricane glass with ice.</li>
<li>Add light rum, dark rum, coconut rum, vodka, gin, raspberry liqueur, triple sec and orange juice.</li>
<li>Shake gently, and garnish with orange slices and a cherry, if desired. Beverage will be about the color of a pink grapefruit.</li>
</ol>
