Peanut Maple Popcorn

Popcorn is a great snack that is also a great canvas for flavors and textures. Thanks to Food Networks Pinterest page, I stumbled upon this Peanut Maple Popcorn recipe that I tweaked a just a little bit.

Peanut Maple Popcorn

This takes regular popcorn to another level. Movie night snacking gets a little bit sweeter with this tasty treat.

Ingredients

  • 1 cup sugar
  • 3/4 cup Real Maple Syrup – pure maple syrup (non of that fake stuff)
  • 1 cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 1 (3.5 oz.) package natural microwave popcorn, popped (10 cups)
  • 2 cups dry roasted peanuts
  1. Preheat oven to 250ºF.
  2. Combine sugar and maple syrup in small saucepan. Cook over medium heat, stirring constantly, until mixture begins to boil. Remove from heat. Blend in peanut butter and vanilla.
  3. Place popped popcorn and peanuts in a large bowl. Pour peanut butter mixture over popcorn, stirring until coated.
  4. Place popcorn in a single layer on a foil-lined cookie sheet. Bake 10 minutes, stirring after 5 minutes. Remove from oven and cool.

Pour into your favorite bowl and ENJOY!

Butterfinger Brownies

Nobody lays a finger on my Butterfinger BROWNIES! Once again I’m in a chocolatey craving and brownies are sure to fix that quickly. Candy packed brownies are always delicious.

Butterfinger Brownies

Not a Butterfinger fan, substitute your favorite candy!

Ingredients

  • 8 ounces semi-sweet chocolate chips
  • 8 tablespoons (1 stick) unsalted vegan butter, cut into chunks
  • 4 tablespoons dutch process cocoa powder
  • 3 large eggs
  • 1 1/4 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1/3 cup creamy peanut butter
  • 1/2 teaspoon salt
  • 1 cup all-purpose gluten free flour
  • 4 regular-sized Butterfinger bars, coarsely chopped
  1. Preheat oven to 350ºF. Spray an 8″ square baking pan with nonstick cooking spray or grease with vegan butter.
  2. Microwave chocolate chips and butter in microwave for about 45 seconds. If not mostly melted, microwave for 20 more seconds. Stir until smooth. Whisk in the cocoa powder. Set aside.
  3. Whisk together eggs, sugar, vanilla extract, peanut butter and salt until combined.  Whisk the warm chocolate  mixture into the egg mixture. Stir in the flour until just combined.  Fold chopped Butterfinger bars into batter.
  4. Pour mixture into prepared pan, spread evenly and level the surface with a rubber spatula.
  5. Bake approximately 35-40 minutes. Brownies will be slightly puffed and a toothpick inserted into the center should come out mostly clean.
  6. Transfer to a wire rack and cool to room temperature for about 2 hours. Cut into 1″ squares.
  7. Store in a tightly sealed container; preferably in the refrigerator.

MMMmm chocolatey, peanut buttery, chewy and delicious! (Just like it should be! :D)

Oatmeal Peanut Butter Bars with Peanut Butter Frosting

Another wonderful recipe chock full of sticky, creamy, peanut butter goodness for this National Peanut Butter Day!

Oatmeal Peanut Butter Bars with Peanut Butter Frosting

These oatmeal cookie bars are chewy and delicious. And for a peanut butter lover, they deliver. Peanut butter throughout. The frosting is especially addicting.

Ingredients

For the Oatmeal Peanut Butter Bars: 

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup natural creamy peanut butter
  • 1/2 cup vegan butter, softened (Earth Balance)
  • 1 egg, lightly beaten
  • 1 cup all-purpose gluten free flour
  • 1/2 teaspoon baking soda
  • 1 cup gluten free oatmeal

For the Peanut Butter Frosting:

  • 1/4 cup vegan butter, softened (Earth Balance)
  • 1/4 cup natural creamy peanut butter
  • 1 tsp. vanilla extract
  • 2-3  tablespoons coconut milk
  • 1 3/4 cup powdered sugar
  1. Preheat oven to 350ºF.
  2. Line a 9×13 pan with wax paper.
  3. Cream vegan butter, peanut butter and sugars in a large bowl.
  4. Beat in egg. Add gluten free flour, baking soda, and oatmeal and mix until well combined.
  5. Press into an ungreased 9×13 pan. Bake for 12-15 minutes, or until the edges are golden brown.
  6. Remove from the oven and let cool completely before frosting.
  7. To make the frosting, combine the vegan butter, peanut butter, and vanilla in a medium sized bowl.
  8. Whip until light and fluffy. Start by adding 2 tablespoons coconut milk and the powdered sugar.
  9. Whip until incorporated. Adjust by adding more milk or more sugar until you reach the desired consistency.
  10. Spread ALL over your completely cooled blondies.

One Minute Peanut Butter Cake

I just happened to stumble upon this SUPER quick recipe on Pinterest and of course I had to share. This quick and easy cake pops up in just 30 seconds in the microwave and it take just 30 seconds to whip up the delicious glaze. Quick AND delicious? Yea it’s not a dream. It’s reality.

One Minute Peanut Butter Cake

Serves 1. Having a sugar craving but there is not dessert in the house? A little peanut butter and your favorite gluten free flour is the answer to your sweet tooth calling.

Ingredients

  • 1 egg, beaten
  • 1 tablespoon brown sugar
  • 1/2 teaspoon baking powder
  • 1 heaping tablespoon gluten free flour
  • 2 tablespoons creamy peanut butter
  • 1 teaspoon rice milk or coconut milk
  • 1 tablespoon powdered sugar (give or take)
  1. In a small bowl, whisk together egg, brown sugar, baking powder, peanut butter and flour.
  2. Pour batter into a greased ramekin. Microwave for 30 seconds. DO NOT OVER MICROWAVE!
  3. While the cake is microwaving, stir together rice or coconut milk and powdered sugar, adding more powdered sugar if necessary to thicken frosting.
  4. Remove cake from ramekin (or don’t), pour frosting over top
