Coconut Blue Hawaiian

A quick cocktail! 🙂

Coconut Blue Hawaiian 

Ingredients

  • 1  cup pineapple juice
  • 1/2  cup (4 ounces) light rum
  • 1/2  cup (4 ounces) blue curaçao
  • 1/2  cup (4 ounces) cream of coconut (not coconut milk)
  • 10  to 12 ice cubes
  • Fresh cherries or maraschino cherries with stems
  1. Chill martini glasses in freezer several hours before serving.
  2. Place all ingredients except cherries in blender. Cover and blend on high speed about 45 seconds or until smooth.
  3. Pour pineapple mixture into glasses. Garnish with cherry.

Blood Orange Margaritas

Blood Orange Margaritas

Ingredients

makes a single serving

  • 1 1/2 ounces tequila (silver or gold, based on your preference)
  • 1 ounce grand mariner
  • 1 1/2 ounces simple syrup
  • 1 ounce fresh lime juice
  • 1 1/2 ounces blood orange juice (about 1-2 oranges)
  • salt and/or sugar for the rim
  • lime/orange wedges for garnish
  1. Rim the ridge of your glass with a lime wedge and dip in margarita salt.(You can combined the salt with some sugar, but that’s up to you.)
  2. Fill the glass with ice.
  3. In a cocktail shaker, combine tequila, grand marnier, simple syrup, blood orange and lime juice with ice, and shake for about 30 seconds.
  4. Pour over ice and squeeze in lemon and orange slices.

Winter Sun Cocktail

This cocktail is sure to bring some sunlight to this chilly and rainy winter night.

Winter Sun Cocktail

Ingredients

Clementine juice and a touch of lemon combine with vodka for a bright and happy drink. A sprig of rosemary adds a whiff of wintry evergreen.

  • juice of 2 clementines (about 1/4 cup)
  • juice of 1/2 small lemon (1/2 oz)
  • 1/2 oz triple sec
  • 1 1/2 oz white rum
  • sprig of rosemary
  • lemon zest
  • sugar
  1. Moisten the rim of your glass with some fruit juice. (The juice helps the sugar to adhere better than water does.) Combine zest and sugar in a shallow bowl or plate. Turn the glass over onto plate and coat with sugar.
  2. Pour juices, triple sec, and vodka into a shaker. Shake and then pour over ice. Garnish with rosemary sprig. (Makes 1.)

 

Watermelon Mojito Popsicles

Well it’s the day after Valentine’s Day. Are you off of your sugar high or still calming down from all the sweet deliciousness of chocolates, caramels and toffees? I think it’s time we mix it up a little bit after all that chocolate and enjoy some fruity goodness! What do you say? Are you in? Hopefully you are! Let’s get to it!

Watermelon Mojito Popsicles

I know it’s not spring yet but hey, we can plan ahead!

Ingredients

  • 3 1/2 cups cubed watermelon
  • Handful fresh mint leaves
  • 3 tablespoons agave (or you can sweeten them with regular sugar)
  • 1/2 lime
  • 2 oz. light rum (use your favorite)
  • 1/2 cup club soda
  1. In a large mixing bowl, muddle the watermelon and mint together until the watermelon is a juice consistency with some small chunks. Once it’s fully muddled, remove the muddled mint.
  2. Add the 3 tablespoons agave (or sugar), 2 ounces rum and squeeze the 1/2 lime into the watermelon juice.
  3. Pour half of the mixture into a cocktail shaker… unless you have a shaker large enough for all of the watermelon. Shake until combined and put into a separate bowl with a spout. Do the same with the other half of the juice.
  4. Add the club soda to the shaken juice and stir.
  5. Fill the popsicle tray up and add a skewer (cut to size) in the center.
  6. To garnish, place a small mint leaf in each of the popsicles. 
  7. Time for the freezer! These will need to freeze overnight because of the rum. They also melt a little faster, so make sure you serve them with a napkin!
*This could also make a very delicious refreshing cocktail!
ooooh I can taste spring already! Come on Spring! We miss you! (Well at least I miss you, A LOT!)
This is a great recipe to keep on tap as soon as spring decides to roll around. But as Mr. Groundhog unfortunately said, 6 more weeks of winter 😦

Super Bowl XLVI Game Day Cocktail

Looking for a delicious Super Bowl XLVI cocktail? How about Game Day Margaritas? Tinted with your teams colors, these drinks are perfect for game day!

Game Day Margaritas 

Ingredients

For Simple Syrup

  • 1 cup sugar
  • 1 cup water

For the Red Cocktail

  • 1/4 cup cranberry juice cocktail
  • 2 tablespoons (1 oz) silver tequila (clear)
  • 2 tablespoons (1 oz) orange-flavored liqueur
  • 1 tablespoon simple syrup
  • 1 tablespoon fresh lemon juice
  • Ice
  • Lemon wedge
  • Colored sugar

For the Blue Cocktail

  • 1/4 cup cranberry juice cocktail
  • 2 tablespoons (1 oz) silver tequila (clear)
  • 2 tablespoons (1 oz) blue Curacao
  • 1 tablespoon simple syrup
  • 1 tablespoon fresh lemon juice
  • Ice
  • Lemon wedge
  • Colored sugar
  1. To make simple syrup, mix sugar and water in 1-quart saucepan. Heat to boiling over medium-high heat, stirring until sugar is dissolved. Remove from heat and set aside to cool, about 1 hour. Pour syrup into glass jar, cover jar and refrigerate until needed. Makes 1 1/4 cups (use 1 tablespoon per margarita).
  2. To prepare cocktail, add cranberry juice, tequila, orange-flavored liqueur, simple syrup and lemon juice to cocktail shaker filled with ice. Cover and shake. Rub rim of martini glass with lemon wedge; dip in sugar. Strain cocktail into glass. Repeat for the blue cocktail, using blue Curacao instead of the orange-flavored liqueur.

 

Midnight Mojito

Here is a delicious cocktail with a deep dark purple color that almost mimics the midnight sky.

Ingredients

  • Bunch mint leaves
  • 12 fresh blackberries
  • 1 teaspoon sugar
  • 3 oz White Rum (use your favorite)
  • 1 oz lime juice
  • club soda
  • crushed ice
  1. In a pitcher, place the mint leaves, blackberries and sugar and muddle well.
  2. Add the rum and lime juice and stir well to combine.
  3. Fill highball glasses with crushed ice and strain the drink into the glasses.
  4. Top it with club soda.
  5. Garnish with mint leaves and blackberries.

Wild Blueberry Lemon Drop

Cocktail time. How about a Wild Blueberry Lemon Drop? It uses not one but two delicious tart and sweet sorbets from Ciao Bella!

Wild Blueberry Lemon Drop 

Ingredients

  • 2 oz citrus vodka
  • 1 oz Cointreau
  • 2 oz. Simply Lemonade
  • Scoop of very soft Ciao Bella Blueberry Sorbet
  • Scoop of Ciao Bella Lemon Zest Sorbet
  1. In a shaker with ice, add all your ingredients except for the Lemon Zest Sorbet and shake,shake, shake!
  2. Pour into chilled glass with a sugared rim.
  3. Finish by adding a scoop of Ciao Bella lemon Zest Sorbet.

New Year, New Drinks

For our New Years Dick Clark’s Rocking New Years Eve with Ryan Seacrest viewing, I had my go to drink of Simply Raspberry Lemonade and Malibu Coconut Rum and it got me thinking. Sure I love my Raspcoconut Cocktail but what other drinks can I make with Malibu? I like Malibu because it’s gluten free and it is so versatile. Plus all the Malibu flavors are great. So with that, I started to think what would taste good and what I would like to share with you!

Twisted Pink

Ingredients

  • 50ml (1 part)  Malibu
  • 50ml (1 part)  Cranberry Juice
  • 50ml (1 part)  Fresh Grapefruit Juice
  1. Pour all the ingredients over cubed ice in a highball.
  2. Stir to mix and chill. Then garnish with a twist and a wedge of grapefruit.

Sun Splash

  • 50ml (1 part)  Malibu
  • 50ml (1 part)  Pressed Pineapple Juice
  • 50ml (1 part)  Pink Grapefruit Juice 
  1. Stir all the ingredients on rock ice in a highball glass.
  2. Garnish with a twist of grapefruit and a pineapple wedge.

Hot Apple Strudel

Yes. Apples and Malibu. So simple yet so delicious.

  • 1 part Malibu
  • 3 parts Apple Juice
  1. Heat the apple juice and pour it over the Malibu in a long drink glass.
  2. For extra flavor, garnish with a cinnamon stick

New Years Eve Spritzer

It’s almost 2012! Time for sparkle, lots of glitter and parties!! Looking for a quick drink that will dazzle your new years guests? Try this bubbly drink!

New Years Eve Spritzer

Ingredients

  • 2 cups chilled dry white wine, nonalcoholic wine or apple juice (you can make 2 batches. One alcoholic and one nonalcoholic)
  • 1 cup chilled cranberry-apple juice drink
  • 1 cup chilled sparkling water
  • Apple slices, if desired
  • Fresh mint, if desired
  1. Mix wine, juice drink and sparkling water.
  2. Serve over ice. Garnish with apple slices and mint.

Oh My Clementine Cocktail

Whole Foods Market has done it again! This time creating a wonderful winter cocktail with an interesting ingredient that you would not normally find in drinks – rosemary. Yes, I know what you’re thinking. Rosemary and clementines? Really? Yes really! The surprising hint of rosemary really makes this cocktail come alive. Whole Foods is a great resource for a variety of recipes that can be tailored for various allergies! So of course this clementine cocktail is gluten free and dairy free! 🙂

Clementine Crush Sparkling Cocktail

Thanks to the vibrant flavors of clementines, cranberries and fresh rosemary, this pitcher full of sparkling wine-based cocktails is prime for winter celebrations. Use a vegetable peeler to remove the clementine zest in large pieces for the chopping and twists.

Ingredients

  • 2 2/3 cups clementine juice, plus 1 tablespoon finely chopped clementine zest, plus 1 clementine for garnish (from 12-14 fruits total)
  • 1/4 cup cane sugar
  • 1 cup 100% Cranberry Juice
  • 3/4 cup fresh cranberries
  • 8 (1-inch) sprigs fresh rosemary
  • 1 (750ml) bottle sparkling wine, such as Pascual Toso Sparkling Brut, well chilled (or use your favorite)
  • 1 (12-ounce) can Tonic Water or Ginger Ale ( I suggest ginger ale)
  1. In a wide, shallow dish, mix zest and sugar together with your fingers. Wet the rim of 8 cocktail glasses with a wet paper towel, and then dredge in clementine sugar to coat.
  2. In a large pitcher, use a wooden spoon to muddle cranberry juice, cranberries and rosemary sprigs thoroughly.
  3. Fill pitcher with ice cubes.
  4. Top off with clementine juice, wine and tonic water or ginger ale.
  5. Stir vigorously; pour into glasses; garnish with clementine twists and serve.

Your cocktail hour just got a little more intersting!
