Super Bowl XLVI Champion Cupcakes

The New York Giants won the Super Bowl XLVI with a score of 21–17.

Even though I am a Jet fan, I am celebrating tonight as a New Yorker. Plus cupcakes and football = fun so we all win! 🙂

To celebrate the Giants Super Bowl victory, Blue Velvet Giants Superbowl Cupcakes!

Super Bowl XLVI New York Giant Champion Cupcakes

Ingredients

For the Cupcakes

  • 1 box gluten free white or yellow cake mix
  • 2 tablespoons cocoa powder
  • 1 1/4 cups coconut milk
  • 1/3 cups canola oil
  • 3 eggs
  • 3 bottles blue food coloring
  • 1 toothpick full violet food coloring gel/paste

For the Frosting

  • 1/2 cups vegan butter, at room temperature
  • 2 cups confectioners sugar
  • 1 teaspoon pure vanilla extract
  • 2-3 tablespoons coconut milk
  • red nonpareils
  1. Preheat oven to 325ºF. Mix cake mix, cocoa powder, eggs, oil and buttermilk together, starting with 30 seconds on low speed, then increasing to medium speed for 1 minute.
  2. Add in food coloring and beat for 1 minute more until totally blue and combined.
  3. Pour into 2 muffin tins lined with baking cups. Fill about 2/3 full.
  4. Bake for 16 – 18 minutes or until a toothpick comes out clean. Let cool.
  5. To make the frosting, beat the vegan butter.
  6. Add in sugar, 1 cup at a time, thinning out with milk as necessary. Beat in vanilla.
  7. Pipe onto cooled cupcakes
  8. Serve and enjoy!

How to Throw a SUPER Super Bowl Party

Alright ladies. Football is mostly dominated by men but women throw THE BEST parties! We’ve got style, energy, grace and creativity to spare. So throwing a SUPER Super Bowl party is right up our alley! Are you ready for some football?!!

So how DO you throw a Super Super Bowl Party? Whether you’re watching this year’s Super Bowl because you love football, love the commercials, wanna get up and dance during halftime or love looking at some cute football players, a good party requires three things: food, drinks and friends.

Theme:

This year’s match up is between is between the New York Giants and the New England Patriots. Since their colors are very similar decorating will be a breeze! Anything red, blue or white will be perfect! Different color plates, cups and napkins keep it simple yet cute all at the same time. Streamers and balloons can also be fun!

Finger Foods:

Let’s see. You’ve got the buffalo chicken wings. You’ve got chips and dip. You’ve got some yummy party mix on hand. What about something sweet? How about strawberries and marshmallows. Not individually but together. (though mini marshmallows and strawberries will work) I’m talking about Tortured Strawberries! (Strawberries in Bruleed Marshmallow Creme!)

Tortured Strawberries! (Strawberries in Bruleed Marshmallow Crème)

Ingredients

  • 2 egg whites
  • 1/2 cup sugar
  • Pinch cream of tartar
  • 1/2 teaspoon pure vanilla extract
  • Pinch salt
  • 1 pound strawberries, rinsed and dried
  1. Add egg whites and sugar to the stainless steel mixing bowl of a stand mixer. Using whisk attachment, whisk on medium-high speed until sugar is incorporated and whites form soft peaks, about 3 to 4 minutes.
  2. Add in cream of tartar, vanilla and salt. Whisk on high speed for about a minute or so. Crème is done when it’s glossy and holding stiff peaks.
  3. Dip and swirl a strawberry into crème. Using a blowtorch (or gas burner, if you are using skewers), brown crème as desired. Place on serving plate (or in mouth!) and serve immediately.
